Only perfectly ripe coffee cherries are harvested for this lot. They are first immersed in water and carefully hand-sorted to remove any defects.
The cherries undergo a 30-hour underwater fermentation before being depulped. The parchment coffee is then thoroughly washed and slowly dried under controlled temperatures until it reaches the ideal moisture content. The result is a clean, vibrant cup with remarkable clarity, perfect for both espresso and filter brewing.
